I control some dragon fodder tokens, a Castle, and a Fervent Charge. My opponent plays an night of souls betryal making my 1/3's into 0/2's. On my turn I attack with them. But we're not sure which happens first to my tokens: do they lose Castle's +0/+2 first and die when they tap or do they gain Fervent Charge's +2/+2 first and attack as 2/2's?
Your tokens don't die. Your goblin tokens are 2/2 tap and attacking. There isn't a phase where you tokens become 0/0. Once they are declare attacking, they instantly lose the bonus +0/+2 from the Castle and gain the +2/+2 from Fervent Charge.

But your goblin tokens do die at the end of your turn.Because they lose the +2/+2 and become 1/1. Whereas the effect of the Night of Souls' Betrayal is still in play, effectively making them 0/0.

Your tokens die as the effect of Night of Soul's Betrayal is continuous, the effect of Castle stops abruptly when the tokens tap to attack and the triggered ability of Fervent Charge is put unto the stack the next time you as a player would get priority. The tokens are 0/0 before the triggered +2/+2 ability is resolved due to checking state-based effects.
